Chai Muesli with Apple
Infused with our classic chai spice, this is a real wake-up muesli, hearty but not heavy, rich in flavour, and with the freshness of apple. The sweetness comes from the dried fruit, chai spice and apple. I've used rice milk here because it's super light, low in fat and has a natural grainy sweetness. Any milk works; almond is great too!
Ingredients (single serving):
4 tablespoons oats
1 apple, grated
4 prunes or dates, chopped (could use raisins!)
handful of walnuts, crushed
1 teaspoon flax seeds
1 tbsp Chai by Mira Classic chai spice
120ml of any milk
120ml cold-brewed chai
Toppings: berries, bananas and a sprinkle of chai – anything you like!
Chai Brew:
120ml water
½ teaspoon loose tea or 1 chai teabag
Optional added spices: 1 teaspoon grated ginger, 1/4 teaspoon cinnamon
Method:
Start by boiling together all the ingredients for the chai brew, or add boiled kettle water to the chai tea bag in a cup.
While this is brewing, mix the oats, dried fruit, walnuts and flax seeds in a bowl and grate the apple.
Let the chai brew cool down before pouring it into the bowl of oats with the milk.
Add the grated apple at the end and mix it into the muesli. Top with your fave toppings!
You can leave this in the fridge to soak for a while, or even overnight, and if the muesli feels too dry in the morning, add a little more milk.
